Directions

  1. In a shallow bowl, prepare the breading.
  2. Whisk the egg in another bowl.
  3. Dip each yellowtail flounder fillet in the egg, ensuring it's fully coated.
  4. Press the fillets into the breading, covering them evenly.
  5. In a skillet, heat olive oil over medium heat.
  6. Fry the breaded flounder fillets until they are golden brown and cooked through.
  7. In a separate pan, sauté mushrooms and minced garlic until tender.
  8. For the creamy Parmesan sauce, combine Parmesan cheese with the cream in a saucepan. Stir until the cheese is melted and the sauce is smooth. Whisk in the white wine and the chopped dill.
  9. Plate the breaded yellowtail flounder, top with sautéed mushrooms, and drizzle the creamy Parmesan sauce over the dish.
  10. Garnish with red caviar and dill.
