Pan Fried Haddock with Potato and Salad

Sauce

whole grain mustard

Directions

  1. Mix flour and spices together
  2. Bring oil up to heat 350F/180°C
  3. Dust fish in flour and seasoning mixture
  4. Add fish to pan, shallow fry the fish until it has a golden brown colour
  5. Turn fish over and fry until golden brown
  6. Remove fish from pan to a plate covered with paper towel
  7. Season with sea salt

Potatoes

  1. Preheat oven to 400F/200°C
  2. In a small pot filled with water, cook baby potatoes until almost fully cooked and tender ~ this should take 10 to 12 mins
  3. Place all your potatoes on a sheet pan, press the potatoes with the bottom of a pan
  4. Drizzle with olive oil and season w/ sea salt
  5. Bake for 10 minutes, turn and bake for another 10 minutes
  6. Season with sea salt, pepper and chopped chives

Salad

  1. Mix all ingredients
  2. Handful of mixed greens
  3. Dress greens with vinaigrette
