Halibut with Snow Crab

Directions

Olive Mixture

  1. In a pan on medium heat, cook the finely chopped shallots with sliced olive oil for 1 minute
  2. Add capers, olives, tomato, cook for 1 minute
  3. Add lemon juice and zest, and finely chopped parsley
  4. This is served warm or at room temperature

Crab

  1. In a small pot on low, heat butter until fully melted
  2. Add crab and let sit for 5 minutes on low heat
  3. Remove crab from butter and serve

Halibut

  1. Preheat oven to 350F/180°C
  2. Hear oil in a cast iron pan on medium heat. Season halibut with sea salt
  3. Let the oil get hot then place the halibut in pan, presentation side down
  4. Sear for 2 minutes then place in oven for 3 minutes, then add butter
  5. Let cook for 1 minute
  6. Remove from oven
  7. Turn fish over
  8. Baste the butter in pan over top of halibut
  9. Place on plate with crab and olive mixture
