Directions
Olive Mixture
In a pan on medium heat, cook the finely chopped shallots with sliced olive oil for 1 minute
Add capers, olives, tomato, cook for 1 minute
Add lemon juice and zest, and finely chopped parsley
This is served warm or at room temperature
Crab
In a small pot on low, heat butter until fully melted
Add crab and let sit for 5 minutes on low heat
Remove crab from butter and serve
Halibut
Preheat oven to 350F/180°C
Hear oil in a cast iron pan on medium heat. Season halibut with sea salt
Let the oil get hot then place the halibut in pan, presentation side down
Sear for 2 minutes then place in oven for 3 minutes, then add butter
Let cook for 1 minute
Remove from oven
Turn fish over
Baste the butter in pan over top of halibut
Place on plate with crab and olive mixture
