Directions

Vegetables

  1. In a pan on med heat cook shallots flat side down in pan with 1/2 the butter when golden brown add water when all water is gone add the rest of the butter and add green onion and snow peas
  2. Cook for 1 minute
  3. Add pea shoots after the pan is turned off
  4. Season with sea salt

Salsa Verde

  1. Finely cut the cilantro and parsley and dice the shallot
  2. Remove seeds and finely cut the jalapeño
  3. Mix all ingredients
  4. Add juice and zest from the lemons
  5. Season with salt & pepper

Cod

  1. Preheat oven to 350F/180°C
  2. In a cast iron pan on medium heat, season cod with sea salt
  3. Let the oil get hot, then place the cod in pan presentation side down
  4. Sear for 2 minutes then place in oven for 3 minutes and then add butter
  5. Let cook for 1 minute
  6. Remove from oven
  7. Turn fish over
  8. Baste the butter in pan over top of cod
  9. Remove from pan
