Directions

  1. Mix flour, corn starch, beer, vodka, water and salt
  2. Preheat deep fryer to 375F/190°C
  3. Dredge cod in flour, then place cod in batter and make sure it is completely coated and then place in deep fryer
  4. Cook until golden brown
  5. Place on paper towel and season with sea salt

Chips

  1. Cut potato into sticks, rinse in cold water, strain and let dry on a cloth
  2. Blanch in deep fryer at 325F/160°C for 3 minutes
  3. Turn deep fryer up to 375F/190°C
  4. Cook until golden brown
  5. Season with sea salt

Sauce

  1. Mix with whisk yolks, dijon mustard and cider vinegar in a bowl
  2. Slowly drizzle oil while whisking until all is added
  3. Add finely diced boiled egg, herbs, gherkins, shallots and salt
